Coriander & Oregano Brined Pork Loin
Ingredients
- 2/3 cup coarse salt
- 2 tbsp sugar
- 1 tbsp peppercorns
- 1 tbsp coriander seeds
- 2 sprigs oregano
- 1 bay leaf
- 1.5 pounds boneless pork loin
- Grill on medium high.
- Rest for 10 minutes before slicing thinly.
Instructions
- Place dried pork directly over heat until browned all over. Move to cool side of the grill, cover and cook until cooked through (thickest part 140-160), about 25 minutes.
