Steamed Blue Mussels with Wine

INGREDIENTS
2 lbs. Island Gold Mussels
2 oz white wine
1 clove garlic (chopped)
2 tbsp. onion (chopped)

Place wine, garlic, onion and mussels in saucepan,
cook on high for 5 to 6 minutes or until mussels
open. Serve with melted butter (optional) or over spaghetti.

Roasted Pork Tenderloin with Fennel & Garlic

12 garlic cloves, peeled
3 pounds fennel bulbs (3-4), fronds and stalkd removed, bolbs cored and cut into eigths.
3 tbsp olive oil
salt/pepper
2 port tenderloins (about 1 pound each).
1/2 tsp dried oregano

Preheat oven to 475

On a baking sheet, toss garlic, fennel, and 2 tbsp oil. Season with salt/pepper. Roast 10 minutes.

Rub pork with remaining oil. Season with oregano, salt/pepper.

Remove backing sheet from over, push veggies to sides and place port in center.

Roast 20-25 minutes, until thickest part is 150.

Transfer to cutting board and rest for 5 minutes.

Pork Loin Roast with Rosemary & Garlic

4 large garlic cloves, pressed
4 teaspoons chopped fresh rosemary or 2 teaspoons dried
1 1/2 teaspoons coarse salt
1/2 teaspoon ground black pepper

2-3 pound boneless pork loin roast, well trimmed

Make non-pork ingredients into a paste and rub on pork 1+ hours in advance of cooking.

Sear non-fat side in advance.

Roast fat side up at 180 for 3 hours, then raise oven to 450 until 150-155, then remove, cover and let sit until carry over to 160-165 (about 10-20 minutes).

Marinated Salmon with Couscous

From Everyday Food

– 1 bunch cilantro, stems removed
– 3 garlic cloves, chopped
– 1-2 red jalapeno (or similar) peppers (seeded and chopped)
– 1.5 in piece fresh ginger, peeled and minced
– 1 tsp paprika
– 1 tsp ground cumin
– 1/4 cup plus 1 tbsp olive oil
– zest of 1 lemon
– 2 tbsp lemon juice
– 4 salmon steaks (6-8 oz each)
– 1 cup couscous

In a food processor, pulse cilantro, garlic, peppers, ginger, paprika, and cumin until fine. Add 1/4 cup oil and lemon juice, pulse to combine.

Arrange salmon in a 9×13 baking dish. Rub both sides with mixture. Cover and fridge 30 minutes.

Preheat oven to 375.

Bake salmon uncovered until opaque (12ish minutes).

Prepare couscous normally, then add lemon zest to finished couscous and stir.

Red wine braised brisket

– 2 tbsp + 2 tsp olive oil
– 3.5 pounds beef brisket, cut into 3″ pieces
– 8 shallots, halved
– 6 cloves garlic
– 3 cups dry red wine

Preheat over to 350.

In a dutch over, heat 2 tbsp oil over medium high. Season brisket with salt and pepper. In batches, cook, turning occasionally, until dark brown on all side. Transfer brisket to play and discard fat.

Return pot to heat and add 2 tsp oil and shallots. Cook until shallots are browned. Add garlic and cook, stirring, until fragrant.

Add wide and simmer rapidly until reduced by 3/4s, about 15 minutes. Return beef to pot and add enough water to cover meat. Bring to boil, cover, then place pot in over. Cook until beef is tender 3.5-4 hours.

Pappardelle with Caramelized Onions

– 2 tbsp unsalted butter
– 5 medium yellow onions, halved, then sliced under 1/4 in.
– 1 tsp coarse salt
– 1 tsp sugar

– 8-9 oz. wide egg noodles (or pappardelle)
– 2 tbsp olive oil
– 1/4 cup lemon juice
– 1/2 cup parsley.

In a heavy (but not too large) pot, melt butter over medium high. Add onions and salt. Cook until softened and just beginning to brown.

Reduce heat to medium. Add sugar and cook, stirring often, until deep golden brown with a jam like consistency. Let cool completely.

Cook pasta.

In a large skillet over medium high, heat oil. Add onions and garlic and cook until garlic is fragrant.

Remove 1.5 cups of pasta water and add to skillet. Cook, tossing occasionally, until liquid reduces to create a sauce to coat pasta.

Add lemon juice and toss with pasta. Serve topped with parsley.

Beurre Blanc

  • 1/4 Cup of white wine
  • 1/8 Cup of fresh lemon juice
  • 1 Clove of Garlic, minced
  • 1 Shallot, minced
  • 2 (or more) sticks butter, in 1 tbsp chunks
  • Fresh Thyme
  • Salt and Pepper

    Put together everything but butter and reduce. Add butter slowly, whisking.

Tangy Chicken with Orzo Pilaf

  • 1 tbsp + 1 tsp vegatable oil
  • 4 checken leg quarters (about 3 pounds)
  • 3 bone-in chicken breast halves (~1.5 pounds)
  • coarse salt and pepper
  • 1 large white onion, minced
  • 3 garlic cloves, minced
  • 4 plum tomatoes, diced
  • 3/4 c. cidar vinegar
  • 2 medium carrots, diced
  • 1 1/4 C. orzo

Preheat over to 400 deg.  In a large dutch over or heavy pot, heat 1 tbsp oil over high.  Season chick on both sides with salt and pepper.  In batches add chicken, skin side down, and cook until skin is golden and crisp, about 7 minutes.  Flip chicken over and cook 3 minutes more.  Transfer chicken to plate.

Pour off all but 1 Tbsp fat from pot and reduce heat to medium-high.  Add onion and cook until translucer, about 5min.  Add garlic and cook, stirring, until fragrant, about 1 min.  Add tomatoes and season with salt and pepper.  Cook until beginning to break down, about 3 min.  Stir in vinegar and return chicken, skin side up to pot.  Bring liquid to a boil.  Transfer pot, uncovered, to oven and bake until chicken is cook thhrough, about 30 min.

Meanwhile in a medium saucepan, heat 1 teasp oil over medium high.  Add carrots and cook until slightly softened, about 3 minutes.  Add orzo, tossing to coat.  Add 1 3/4C water and bring to a boil.  Reduce heat to low and cover.  Cook until water is absorbed and orzo is tender, about 15 min.  Remove from heat, fluff pilaf with a fork.

Serve.

Easy Baked Salmon

If using thin filets, reduce cooking time by 4-10 minutes.

Preheat oven to 450.

  • 4 thick wild coho salmon fillets (1.5-2″ thick) (I don’t care if coho or not, or wild vs. farmed)
  • 1/2 cup mayo
  • zest and juice of half a lemon
  • 2 cloves minced (finely) garlic
  • sea salt and fresh ground pepper to taste.

Place fillets skin side down on a pan that has been lined with Al
foil. Mix mayo with lemon juice, zest, and garlic. Smear mayo mixture
all over the top and sides of the fillets, then add salt and pepper.
Place into hot over and cook 18 minutes. If not done enough bake
another 1-2 minutes.
